    Hilltop Herb Farm
    Makes about 6 pints

    List of Ingredients




    1 medium onion
    1 small garlic clove
    1 cup seedless raisins
    8 cups peeled, sliced peaches
    1 tablespoon chili powder
    1 cup chopped crystallized ginger
    2 tablespoons mustard seeds
    1 tablespoon salt
    1 quart cider vinegar
    2 1/4 cups light brown sugar, firmly packed

    Recipe



    Finely chop onion, garlic and raisins.
    In large kettle, combine onion mixture with remaining ingredients and mix well. Bring to boiling point, stirring constantly until sugar is dissolved. Reduce heat. Simmer, uncovered, stirring occasionally, until quite thick and deep brown in color, about 45 to 60 minutes. Remove from heat.
    Ladle chutney into hot, sterlized pint jars. Seal immediatly according to manufacturer's directions.
