    Serve with ham, pork, lamb, duck, turkey, or asparagus. Yield: 1 1/4 cup

    List of Ingredients




    1/2 cup butter or margarine
    2 egg yolks
    2 tablespoon boiling water
    2 tablespoons fresh lemon juice
    1/2 cup fresh orange juice
    1/4 teaspoon salt
    1/4 teaspoon paprika
    2 tablespoons grated orange rind

    Recipe



    Place butter in a 3-cup saucepan and mix until soft and fluffy. Beat in egg yolks, one at a time. Stir in boiling water; then add lemon juice. Stir and cook 1/2 minutes over low heat. Add orange juice, salt, and paprika. Mix well. Cook over low heat until sauce is the consistency of heavy cream. Remove from heat and blend in orange rind.
