    1/4 cup butter
    1/4 cup flour
    1/2 teaspoon salt
    Dash cayenne pepper
    1 1/2 cups brown stock
    2/3 cup orange juice
    2 tablespoons sherry or port wine
    Grated rind of 1 orange

    Recipe



    Melt butter; add flour, salt, and cayenne, stirring until well browned. Slowly add stock. Just before serving, add orange juice, wine, and grated orange rind.
