    Mayo- Quick Lime Mayonnaise

    List of Ingredients




    1 large egg at room temperature
    5 teaspoons fresh lime juice, or to taste
    1 teaspoon Dijon-style mustard
    1/4 teaspoon salt, or to taste
    1 cup safflower oil or flavorless vegetable oil

    Recipe



    In a food processor or blender with the motor on high blend the egg, the lime juice, the mustard, and the salt, and the oil in a steam, and blend the mayonnaise until it is emulsified. Season the mayonnaise with salt and lime juice to taste. Makes about 1 cup.
