    Mayo- Spicy Saffron Mayonnaise

    List of Ingredients




    7 garlic cloves
    1/4 teaspoon saffron threads
    1/4 teaspoon salt
    1 cup mayonnaise
    1 tablespoon fresh lemon juice, or to taste
    1/4 teaspoon cayenne

    Recipe



    In a small saucepan of boiling water simmer garlic 5 minutes. While garlic is simmering, set a rack over pan and put saffron in a heatproof saucer on rack. Heat saffron 3 or 4 minutes, or until brittle. Remove sauce and rack and crumble saffron into a bowl. Drain garlic and mash to a paste with salt. Add garlic paste, mayonnaise, lemon juice, and cayenne to saffron and whisk sauce until smooth.
    Chill sauce, its surface, covered with plastic wrap, at least 1 hour for flavors to develop. (Color of sauce will deepen as safffron softens and dissolves.). Sauce may be made 1 week ahead and chilled, covered. Stir sauce before serving.
    Serve sauce with steamed lobster or stirred into fish soups. Makes about 1 1/4 cups.
