    Makes 1 cup

    2 cups fresh mint leaves, finely chopped

    1 tablespoon plus 11/2 teaspoons granulated sugar, plus more to taste

    1/4 teaspoon salt

    2/3 cup boiling water

    1/2 cup cider vinegar or malt vinegar


    Recipe



    Mix together mint, sugar and salt in small bowl; cover with boiling water. Let stand until cool.

    Stir in vinegar. Cover; set aside to let flavors develop, about 1 hour. Serve immediately or refrigerate up to 2 days.
