1/2 cup de-stemmed parsley tops
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste
Recipe
Blanch parsley in boiling salted water for 3 seconds; remove and plunge immediately into ice water, then remove quickly and dry completely with paper towels. Place all ingredients in mini-blender or mini-food processor and blend until smooth. Reserve.
