Parmesan Cream Sauce

Made with real cream, this is the classic sauce for Fettuccine Alfredo.
2 tbsps. olive oil
1 tbsp. butter
3 tbsps. minced shallots
1/2 cup heavy cream
1/2 cup freshly ground Parmesan
Recipe
In skillet over moderate heat, warm olive oil and butter. Add shallots; cook gently until soft.
Add cream; cook over low heat 3 to 4 minutes more, whisking to incorporate cream. Add Parmesan and remove from heat.
Makes about 1 cup sauce.
