Pesto- Blender Pesto
List of Ingredients
2 cups whole fresh basil (handle carefully as they lose essence and flavor when torn or chopped too soon before use)
1/3 cup olive oil
3 tablespoon pine nuts
2 clove garlic, lighly crushed and peeled
1 teaspoon salt
1/2 cup very finely grated Parmesan cheese
3 tablespoon very finely grated pecorino Romano cheese
2 tablespoons butter, softenedRecipe
Place basil, olive oil, pine nuts, garlic cloves, and salt in blender and mix at high speed. Stop from time to time and scrape ingredients down toward bottom of blender cup with spatula.
When evenly blended, pour into bowl and by hand, beat in finely grated cheeses. (This results in more interesting texture and better flavor than when you mix cheeses in blender.) When cheeses have been evenly incorporated, beat in softened butter.
Use with 1/2 pound spaghettini or linguine, cooked add 2 to 3 tablespoons of hot pasta water to pesto and blend.
