    Makes about 1 cup

    List of Ingredients




    1 1/2 cups cilantro leaves
    2 large cloves garlic, peeled
    1/2 teaspoon salt
    1/2 teaspoon cracked black pepper
    2 1/2 tablespoons toasted pine nuts or chopped and toasted macadamias
    3/4 cup light olive oil, vegetable oil or mild peanut oil

    1. Rinse the cilantro leaves and dry in a kitchen towel, set aside. Place the garlic, salt and pepper in a heavy stone mortar or in the bowl of a food processor fitted with the metal blade. Grind to a pulp. slowly begin to incorporate the cilantro leaves, pine nuts and oil, adding a little of each after each lot has been thoroughly pounded and emulsified. Use only as much oil as will be absorbed by the emulsion, excess will cause it to crack and be spoiled. Sotre in the refrigerator for up to 1 month.
