Pesto- Parsley Pesto
List of Ingredients
1 1/2 cups coarsely chopped flat-leaf parsley
1 large garlic clove, coarsely chopped
3 tablespoons freshly grated Parmesan or Asiago cheese
1 tablespoon red wine vinegar
1/4 cup olive oil
Salt and freshly ground pepperRecipe
In a food processor or blender, combine the parsley, garlic, cheese and vinegar and puree just until combined. Scrape down the side and, with the machine on, add the oil in a slow steady stream and process until emuslsified. Season with salt and pepper to taste.
