Sweet- Cranberry Syrup
List of Ingredients
12 ounces cranberries, washed and drained
3/4 cup water
1 cup plus 2 tablespoons packed dark brown sugar
3/4 cup light corn syrup
Recipe
To prepare syrup, place cranberries, water, brown sugar and corn syrup in large heavy saucepan over medium-high heat. Bring to simmer and lower heat. Cook 4 to 5 minutes until all berries have popped. Remove from heat, strain cranberries and set aside. Return strained liquids to saucepan and place pan over medium-high heat. Cook until mixture is reduced to a little over 1 cup, 5 minutes or longer. (Sauce can be made 2 days ahead. Cool, cover and refrigerate. Save cooked cranberries for garnish and store separately. When ready to use, bring cranberries to room temperature and reheat syrup over low heat, stirring.)
