    Cheesy Carrot Soup

    List of Ingredients




    3 carrots, peeled and shredded
    1 small onion, chopped
    1/2 cup chopped celery
    2 cups chicken broth
    2 cups milk
    1/4 cup all-purpose flour
    1/4 teaspoon salt
    1/8 teaspoon pepper
    1 1/2 cups (6 ounces) shredded medium Cheddar cheese

    Recipe



    Combine first 4 ingredients in a medium saucepan; bring to a boil. Reduce heat, and let simmer for 15 minutes.
    Combine milk, flour, salt, and pepper in container of electric blender; blend until frothy. Spoon in one-third of the vegetable broth mixture; blend 20 seconds. Repeat until all ingredients have been blended. Pour mixture back into the saucepan. Stir in the cheese. Cook over medium heat, stirring constantly, until cheese is melted. Yield about 5 cups.
