    Curried Chickpea Soup

    List of Ingredients

    (Serves 8)


    1/4 cup olive oil
    2 medium onions, chopped
    3 to 4 ribs celery, chopped
    8 cloves garlic, chopped
    3 cans chickpeas, drained
    1 tablespoon salt
    1/2 teaspoon white pepper
    2 1/2 tablespoons curry powder
    1/4 teaspoon cayenne pepper
    2 tablespoons tahini
    2 1/2 quarts vegetable stock
    2 tablespoons fresh lemon juice
    Chopped chives

    Recipe

    Heat oil in a 2- to 3-quart saucepan. Add onions and celery and cook until vegetables are just translucent. Add garlic; cook until onions begin to brown. Add chickpeas, salt, pepper, curry powder and cayenne pepper and stir for 2 to 3 minutes. Add tahini and vegetable stock and bring to a boil.
    Reduce heat and simmer, 25 to 30 minutes, stirring occasionally. Remove from heat and let rest 5 minutes. Puree soup with an immersion blender. Stir in lemon juice and garnish with chives.
