    List of Ingredients




    3 Tbsp. each: butter, minced onion and grated carrot
    4 C. chicken broth
    1/2 tsp. each: dry mustard powder and paprika
    2 Tbsp. cornstarch
    1/4 C. milk
    1 C. (4 oz.) grated Cheddar cheese
    1 C. flat beer
    Salt & freshly ground black pepper to taste
    2 Tbsp. minced fresh parsley

    Recipe



    Melt butter in a large saucepan over medium
    heat. Add onion and carrot and saute 10 minutes,
    stirring occasionally. Add broth, mustard powder
    and paprika Reduce heat to low and simmer 15
    minutes.

    In a small bowl, combine cornstarch and
    milk; stir into soup and cook 5 minutes.
    Add cheese and beer, stirring over low heat,
    until cheese melts. Season with salt and pepper,
    then sprinkle with parsley and serve.

    Makes 6 servings.
