    3 tablespoons coriander seeds
    2 1/2 tablespoon cumin seeds
    2 1/2 tablespoon black peppercorns
    8 cloves
    6 to 8 green cardamom pods
    1 1/4-inch cinnamon stick
    1/4 nutmeg pod

    Recipe



    1. Place the coriander and cumin seeds in a small pan without oil and dry roast them over medium heat until they are aromatic, 3 to 5 minutes, stirring or shaking the pan frequently so they cook evenly. The longer the spices cook, the darker they will become and will develop rich "toasty" aromas.
    2. Transfer to a mortar or spice grinder, add the remaining ingredients and grind to a semi-fine powder, then sift to remove and large fragments and unwanted skins. When completely cool, store in a spice jar for up to 1 month.
