    Artichoked bottoms

    List of Ingredients





    1 (1-lb.) pkg. frozen chopped spinach, thawed

    1/2 cup onion, chopped

    4 tbls. butter or margarine, melted

    1 cup sour cream

    4 tbls. Parmesan cheese, grated

    1/2 tsp. salt

    1/4 tsp. black pepper

    Dash cayenne pepper

    2 (13.75-oz.) cans artichoke bottoms, drained

    Parmesan cheese for topping

    Recipe



    Thaw spinach, drain and squeeze out most of the moisture.
    Saut‚ onion in butter or margarine for about 5 minutes or until tender. Stir in the drained spinach. Add sour cream, Parme-san cheese, salt and peppers.
    Spoon spinach mixture into the artichoke bottoms. Sprinkle with Parmesan cheese. Care-fully place in shallow baking dish.
    Add water to barely cover the bottom of baking dish. Place dish in preheated 350-degree oven and bake for about 20 minutes or until bottoms are heated through and steamy.
    Serves 10.
