    Corn- Fresh Corn Polenta

    List of Ingredients



    8 ears very fresh sweet corn, shucked
    1 sprig marjoram
    3 tablespoons unsalted butter, cut into cubes
    3 tablespoons freshly grated
    Parmigiano-Reggiano
    Kosher or sea salt and freshly cracked black pepper


    Recipe


    Cut the kernels off the corn, but do not cut to close to the cob. Working over a bowl, scrape each cob with the dull side of the blade of the knife to extract as much of the corn milk as possible.

    Place the corn kernels and corn milk in a small heavy saucepan. Mix well and add the marjoram. Bring to a simmer and cook until the mixture thickens. Add the butter, cheese, and salt and pepper to taste. Remove from the heat and serve at once
