Zucchini Puff

List of Ingredients
- 1 1/2 cups grated zucchini
- salt
- 3 T. butter
- 1/3 cup grated onion
- 1/4 t. crushed thyme
- 2 eggs, separated
- 1/4 cup milk
- 1/3 cup fine bread crumbs, divided
- 1/4 cup parmesan cheese
- 1 t. butter, melted
Instructions
- Sprinkle zucchini with salt. Place on paper toweling and let rest 30 minutes. Press to remove water and pat dry.
- Preheat oven to 325 degrees.
- In large skillet melt butter. Add onion and cook until soften. Remove from heat. Add thyme,beaten egg yolks,milk,1/4 cup bread crumbs and zucchini. Stir to mix.
- Beat egg whites until stiff. Fold into zucchini mixture.
- Spoon into a buttered 1 quart baking dish. Sprinkle with remaining bread crumbs,Parmesan cheese and melted butter.
- Bake 25 to 30 minutes or until puffed and golden.
