    The World's Best Carrot Cake

    The easiest and certainly the best tasting that I have ever tried!

    List of Ingredients




    1 1/2 C oil
    2 C flour
    1 tsp salt
    2 tsp cinnamon
    2 C grated carrots
    1 C chopped walnuts
    1 8.5 oz can crushed pineapple - do not drain
    3 eggs
    2 C sugar
    2 tsp vanilla
    2 tsp baking soda
    1 C shredded coconut
    Cream cheese frosting (see bottom)

    Recipe



    Preheat oven to 350 degrees.

    Mix all ingredients together. Pour into greased 13 x 9 x 2 pan and bake at 350 degrees for 40 to 45 minutes. Do not open the oven until the cake is done.

    Frosting:

    1 8 oz cream cheese
    1/2 C soft margarine or butter
    1 box powdered sugar

    Beat above ingredients until creamy and frost after cake has cooled. Refrigerate.
