    Banana Bread

    List of Ingredients

    1 1/2 cups all purpose flour
    1 tsp baking soda
    1/2 tsp salt
    1 cup white sugar
    2 eggs, beaten
    1/4 cup butter, melted
    3 really ripe bananas, mashed
    1 tsp vanilla
    1 TBSP milk
    1 cup walnuts, coarsely chopped (OPTIONAL) (I put them in a ziploc baggie and bang a few times with a ladle)

    Recipe

    Grease and flour a loaf pan (sorry I don't have measurements). Preheat oven to 350 degrees.

    In one bowl, whisk together flour, baking soda, salt and sugar. Mix in slightly beaten eggs, melted butter, milk, vanilla and mashed bananas. Be sure not to overmix. Stir in nuts if using. Pour into prepared pan.

    Bake at 350 degrees for one hour, or until wooden toothpick inserted in center comes out clean. When done, remove from oven and place pan on cooling rack. Let cool for about 10 minutes, then run a knife gently around the edges to loosen and carefully remove loaf from pan (using a towel so you don't burn your fingers) and let finish cooling on rack. Store covered.
