    oil (I use olive oil)
    1 chicken, cut up and skinless (I use skinless, bone in legs and thighs)
    1 pack italian sausages (optional)
    3 onions, coarsely chopped
    2 tsps garlic powder
    2 tsps minced garlic
    1 tsp minced garlic
    1 packet Goya Sazon
    salt to taste
    finely ground red pepper
    Hot Sauce (I use Franks)
    8 cups HOT water (substitute chicken broth for part of the water if you want)
    4 cups long grain rice (Not instant)
    black pepper

    Heat oil. Brown chicken and sausage very well. Cut sausage into circles. Add onions and brown. Add garlic powder, salt, red pepper, sazon, garlic and hot sauce to taste. Add water (and chicken broth if using). Let mixture come to a boil. Check seasonings at this point and add more garlic powder, salt, hot sauce, etc now.

    Add rice. Put a lid on the pot and let it rest for 10 minutes on a medium flame. Remove the lid and stir. Cover and cook until liquid is absorbed and rice is tender (this took 15 minutes for me) Adjust seasonings and serve.
