Coconut Filling

2 cups sugar
1/4 cup water
2 cups flaked coconut
1 Tbls. cornstarch
2 Tbls. cold water
1 Tbls. + 1 tsp. lemon rind
2 Tbls. lemon juice



Recipe



Combine sugar, water, and coconut; cook over medium heat until mixture boils. Dissolve cornstarch in cold water; stir into coconut mixture. Cook over low heat until mixture thickens. Remove from heat and add lemon rind and juice. Stir well. Let mixture cool to room temp. About 1 1/2 cups filling.
