Recipe Introduction
Before I was a sushi kind of gal, these were my favorites. I now love many different sushis... but these still rank up there and are easy to make... so enjoy these. You may have to go to an Asian market for some of the ingredients
List of Ingredients
Age sushi (pronounced Age' or augay) also known as cone sushi
2 pkgs. Age: (tofu that you slice for sushi) You will find these in
asian market, and they are fresh or frozen.
Cut in half. Boil for 20 minutes, then rinse well with luke warm water. (1 dozen age)
Sauce:
1/2 c. sugar
1/4 c. soy
1 tsp. salt
1/2 c. dashi
1/4 c. mirin
Place the boiled and drained age into this sauce for 30 minutes or until broth is absorbed while cooking on medium-low heat.
Rice:
4 c. rice
4 c. water
Cook the rice until done.
1 c. vinegar
1 c. sugar
1/2 t. salt
Dissolve and sprinkle over hot rice. Cover rice with a dish towel for 5 minutes. Mix well and cool by fanning. Pack cooled age lightly with prepared rice.

I also add toasted sesame seeds sometimes or grate some carrots to add to the rice mixture... or both. Adds flavor and color.
