    I LOVE roasted vegetables! Here's a hearty sandwich that is quick to make and is low, low, low in calories. You can add Tofu for extra protein. Best on a whole grain bread or mushroom caps. All ingrediants are optional; feel free to substitute or omit.


    List of Ingredients


    • Red, Orange, Yellow, and/or Green Bell Peppers
    • Whole Large Mushrooms - Portabello-like
    • Tomatoes
    • Parnips, Turnips, Carrots
    • Lettuce, Spinach, Arugala, Kale, Collard, Mustard Greens
    • Beets
    • Kernels of Corn - steamed and ground into paste like mustard
    • Potatoes, Squash, Eggplant - thinly sliced
    • Maramite - to avoid salt
    • Ground flax seeds
    • Mustard
    • Balsamic Vinegar
    • Spices and herbs
    • Other vegetables of choice!


    Instructions


    1. Slice vegetables into thin slices, as possible. Greens and mushrooms are not sliced.
    2. Roast over grill or in oven. Assure that potatoes are cooked thoroughly. These can be baked in the oven or eaten "a la dente" from the grill.
    3. Steam corn kernels until done. Mash into a paste, add water, if necessary. Add to roasted mushroom or bread.
    4. Assemble vegetables onto mushroom or bread with condiments.
    5. Enjoy!
