    I recently returned from Ireland where scones are served in every home. I had some good ones and some bad ones. I've tried making them since I arrived home. This is the best recipe that I've found.

    List of Ingredients




    2 c. all-purpose flour
    1/4 c. sugar
    2 1/2 to 3 tsp. baking powder
    1/2 tsp salt
    1/2 c. butter, slightly softened
    3/4 c. raisins
    2 eggs
    1/4 c. milk
    Additional sugar for sprinkling
    1 egg white, beaten until foamy

    Cover raisins with warm water and set aside. Preheat oven to 400 degrees.

    Mix flour, sugar, baking powder and salt together in large mixing bowl. Cut in butter just until mixture looks like coarse crumbs. Add eggs and milk. Add raisins that have been drained on a paper towel but are now warm and plump. Dough should be a little softer than pie crust. Knead on floured surface 5 to 8 times. Cut dough in half and make 2 rounds. Cut each round into 4 triangles. Place on lightly greased baking sheet.

    Brush with egg white, then sprinkle lightly with sugar.Bake 14-17 minutes until golden.

    Note: To keep these tender, don't overmix or overknead. Less is more with these scones.
