    Here's a really good gingerbread recipe
    1/2 cup butter, softened

    1/2 cup brown sugar

    1/2 cup molasses

    3.5 cups all purpose flour

    1 tsp baking soda

    1 tsp cinnamon

    1 tsp ginger

    1/2 tsp salt

    1/4 tsp cloves

    1/3 cup water.

    Cream butter and sugar with electric mixer. Beat in molasses. Blend all dry ingredients. Alternately add blended dry ingredients and water to the butter/sugar mixture. Dough will become stiff, so the last dry mixture may have to be added by hand. Work dough until it is smooth in consistency. If dough sticks to your hands, lightly dust them with flour. When dough is easy to work, you're ready to roll it out and make your gingerbread house pieces. Refrigerated dough will keep for a week, but be sure to remove it 3 hours prior to rolling. You will need 3 batches of dough to make a good sized house
    When you roll out the dough I use heavy commerical half sheet pans i spray the back of them with Pam and put a small cutting board in the middle on the inside under the upside down pan to hold up the center of it now roll out the dough on the back of the pan roll enough dough to cover the entire pan then place your patterns on it cut them out and bake as directed after removing the baked gingerbread from the oven remove them from the pan and place on a wire rack to cool and dry

    Royal Icing

    3 egg whites
    1 pound powdered sugar
    1/2 teaspoon cream of tartar

    or

    3 3/4 cups sifted confectioners' sugar
    3 T meringue powder
    6 T warm water
    Both recipes are easy meringue powder is available at most grocery stores or at Michael's or Hobby Lobby both carry Wilton cake decorating supplies
    keep a moist towel on the frosting to keep it from drying out
