NOTE FROM POSTER;This is the recipe I ended up using since I didn't have corn flakes. I LOVED it and I don't think I will try the other one. This one is a keeper! I thought they would stay in a ball shape like mexican wedding cookies, but they didn't. They spread out nicely and I baked them for 9 minutes. I let them cool then I dipped the tops into powdered sugar. I also used my small cookie/ice cream scoop to ball up the dough. They were perfect that size! And I didn't grease the pan, but I did bake on my silpat. The cookies also stayed nice and soft. YUM!
Key Lime Cookies
1/2 cup butter
1 cup sugar
1 egg plus 1 egg yolk
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 cup key lime juice
1 1/2 tsp grated lime zest
1/2 cup confectioners' sugar
Preheat oven to 350 F. Spray baking sheets with nonstick vegetable coating.
In a large bowl, mix butter, sugar, egg and egg yolk until creamy. Thoroughly mix in flour, baking powder, salt, lime juice and lime peel.
Spray cookie sheet with non-stick vegetable coating. Form dough into 1/2-inch balls. Place on prepared cookie sheet and bake at 350 F until lightly browned (8 to 10 minutes).
Remove to wire rack. While still warm, sift confectioners' sugar over cookies.
