    Spaghetti With Olive Oil, Garlic and Parmesan Cheese
    Fresh and easy-to-make pasta dishes are hard to come by. The Scotto family, of New York's Fresco restaurant, shares their favorite recipes

    The Scotto family
    Serves 4

    INGREDIENTS

    • 1 pound spaghetti pasta
    • 2 tablespoons garlic, chopped
    • 1/2 cup extra virgin olive oil
    • 4 tablespoons parmesan cheese, freshly grated
    • 2 tablespoons basil, chopped
    • Salt and freshly ground black pepper, to taste
    • Pinch red pepper, to taste


    DIRECTIONS

    Cook pasta according to package directions in a lightly salted pot of boiling water. Set aside 1/2 cup of the pasta water.

    In a large sauté pan, heat olive oil over medium to high heat and cook garlic until golden brown (about 2 to 3 minutes). Add 1/2 cup of pasta water and mix.

    Add cooked pasta and basil to sauté pan. Toss quickly and place on a large serving platter. Add parmesan cheese, salt, black pepper and red pepper. Serve immediately.
