    1 pound Andouille sausage
    2-3 links of Sweet Italian sausage
    1 pound shrimp-peeled and deveined
    1 green bell pepper diced
    3 ribs of celery diced
    1 medium sweet onion
    1/4 teaspoon cayenne pepper
    1 teaspoon Cajun seasoning (or more if desired)
    3 cloves garlic minced
    4 cups chicken broth
    2 cups rice
    1 large can crushed tomatoes
    Salt and pepper to taste (not much as the chicken broth and the sausage are salted and the seasonings are hot.)

    *You can also add cooked and shredded chicken if desired.

    Cut Andouille sausage into 1/4" slices. Add to heated dutch oven or soup pot. Pinch off small 'blobs' of Italian sausage and add to pot. Saute over medium high heat until sausage is browned and cooked through. Remove from pot and keep warm on plate or bowl. To same pot (with grease from sausage)add the onion, celery and bell pepper with salt and pepper to taste. Add a little more oil if needed. Saute until clear. Add garlic. Cook an additional 1-2 minutes. Add the cayenne and the Cajun seasoning. Pour in the can of tomatoes and the chicken broth. Stir to mix. Add the sausage back in. Add rice. Stir to mix. Bring to a boil then cover and reduce to simmer. Continue to simmer until rice is tender and most of the liquid is absorbed. About 10-15 minutes.Add peeled shrimp. Cover and continue to cook 5-10 more minutes until shrimp is done.
