    LARGE BAG OF CHOPPED SPINACH
    ½ MEDIUM ONION, CHOPPED
    1-2 CLOVES GARLIC, CHOPPED
    3-4 EGGS, BEATEN WITH SALT AND PEPPER TO TASTE
    2 TABLESPOONS OLIVE OIL

    PUT OLIVE OIL IN FRYING PAN AND ADD CHOPPED ONION AND GARLIC. SAUTE UNTIL TENDER AND TRANSLUCENT. ADD THAWED AND DRAINED SPINACH WITH SALT AND PEPPER TO TASTE. SAUTE UNTIL HEATED THROUGH. ADD BEATEN EGGS AND COOK, OVER MEDIUM HEAT, STIRRING LIKE SCRAMBLED EGGS, UNTIL MOST OF THE LIQUID IS ABSORBED AND FAIRLY DRY IN THE SKILLET.
