    Thai Hot and Sour Shrimp Soup

    This soup is Very spicy and if you have tender tastes you can ajust the pepper sauce and peppers to your taste.


    List of Ingredients


    • 1 pound Shrimp -- Raw unpeeled Small
    • 2 Stalks Lemon Grass
    • 3 Whole Spring Onions -- cut into 1/2 inch pieces
    • 1 Teaspoon Lemon Zest -- grated
    • 1-15 Ounce Can Straw Mushroom
    • 4 Whole Thai Chilies Hot cut into very thin rounds
    • 5 Cups Chicken Stock Canned Is Ok, Use Low Salt
    • 3 Tablespoons Fresh Coriander or 1 tablespoon dried
    • 1 Teaspoon Soy Sauce
    • 1 Tablespoon Fish Sauce
    • 3 Tablespoons Lime Juice
    • 1/4 Pound Extra Firm Tofu
    • 2 teaspoons Chili Paste, Nam Prik Pow-(At Asian Markets)


    Instructions


    1. Wash the unpeeled shrimp. Peel and de-vain them, keep the shells.
    2. Cut 2 inch pieces from each stick of lemon grass starting from the bottom end, and crush lightly.
    3. Discard the top.Combine the stock, lemon grass, lime leaves and shrimp peelings in a pan.
    4. Bring to a boil and simmer gently for 20 minutes. Strain. Add fish sauce, lime juice,sliced chilies and chile paste. Adjust seasoning if required(more fish sauce or lime juice).Add the drained mushrooms, tofu and the shrimp.Before serving Cut the tofu into small cubes. Wash and dry the coriander leaves. Bring soup to a boil. Add shrimp and tofu, cook 2 minutes or until the shrimp are opaque.
    5. Add garnishes to serving bowls.


    Final Comments


    This hot and spicy Thai soup is the best the Whizbang's have tried.
