    6 cups watermelon rinds
    4 tablespoons salt
    1 tablespoon ground ginger
    4 cups sugar
    7 cups water
    2 quarts water plus more for soaking and cooking
    1/4 cup freshly squeezed lemon juice
    1 lemon

    Recipe



    Trim the outer green skin and pink pulp from the watermelon rind. Cut the trimmed rind into 1-inch squares & measure out 6 cups. Dissolve salt in 2 quarts of cold water & soak the melon rind overnight.

    Next, drain the rind & rinse well. Then add water just to cover & let stand for 30 minutes. Drain again. Boil sugar, ground ginger, lemon juice & 7 cups of water in a preserving kettle for 5 minutes. Slice the lemon wafer thin and discard the seeds. Put the lemon slices, melon rinds & syrup in a pot & boil the mixture until the rind is clear & transparent, almost 25 minutes. Ladle into hot, sterilized half-pint jars & seal immediately.

    Makes, 6 half pints
