    (Note: this can be made in a meat grinder, if you have one.)

    List of Ingredients




    1/2 lb. deli meat, ham or turkey or both
    2 Tblsp. Dijon mustard
    2 tsp. mayonnaise
    1/4 tsp. black pepper
    1/8 tsp. cayenne
    1 large dill pickle
    1 stalk celery, coarsely chopped
    2-3 green onions, coarsely chopped
    Italian Mix Giardiniera (Italian pickled vegetables, especially cauliflower - lately I have found pickled cauliflower by itself and use that)

    Cube the mean into portions that will fit into your food processor. I use a small food processor for this that also has a "chop" setting. You really do not want to create a purée with this. Put the cubed meat into the processor with the mustard, mayonnaise and pepper. Process until it is a consistency that you like. Remove to a storage bowl and chop the pickle, celery, onions, and cauliflower into a relish. Sometimes you can do this with the food processor, if it has a "chop" setting; otherwise, you may have to mince it with a knife. Combine this with the meat mixture and it is ready to serve or to store.

    Serve with Melba toast or your favorite crackers.
