    Carrot Cake Made Easy

    1 package yellow cake mix
    1/2 tsp. ground nutmeg
    1 pkg. instant vanilla pudding mix (4 serving size)
    1/4 tsp. ground cloves
    4 eggs
    1-1/2 cups shredded carrots
    1 cup water
    1 cup yellow raisins, soaked in water to plump
    1/3 cup vegetable oil
    3/4 cup crushed, well-drained pineapple
    1 tsp. ground cinnamon
    1 cup chopped nuts

    Recipe

    Grease & flour two 8" round pans. Combine cake mix, pudding mix, eggs, water, oil, & spices in a large bowl. Beat at medium speed with electric mixer for two minutes. Stir in carrots with a spoon, just to mix; then raisins, then pineapple, and finally nuts. Pour immediately into prepared pans & bake at 325° F. for 35-45 minutes. Check with toothpick or cake tester. If cake is filled or frosted with cream cheese icing, store in refrigerator.
