    Easy Peach Cobbler

    List of Ingredients

    4 cups peaches, peeled and sliced (if using canned, drain well)
    1/2 cup butter, softened
    3/4 cup sugar
    1 cup all-purpose flour
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 cup milk
    1/2 tsp. vanilla extract
    3/4 cup sugar
    1 tsp. cornstarch
    1 cup boiling water

    Recipe

    Place peaches in a lightly greased 12- x 8- x 2-inch baking dish; set aside. Cream butter; add 3/4 cup sugar, beating well at medium speed of an electric mixer. Combine flour, baking powder, and salt; add to creamed mixture, mixing well. Stir in milk and vanilla. Pour batter over peaches. Combine remaining 3/4 cup sugar and cornstarch in large measuring cup; stir in boiling water. Carefully pour mixture over batter; bake at 375 degrees F. for 45 to 50 minutes. Yield: 8 servings.
