    Beef Enchiladas

    List of Ingredients

    1 lb. ground beef
    1 cup cottage cheese
    2 Tblsp. minced fresh parsley
    1/2 tsp. garlic powder
    1/2 tsp. salt
    1/4 tsp. pepper
    8 flour tortillas (7-inch)

    SAUCE:
    1 medium onion, chopped
    1/2 medium green pepper, chopped
    1 Tblsp. cooking oil
    1 (15 oz.) can tomato sauce
    1 (4 oz.) can chopped green chilies
    2 tsp. chili powder
    1 tsp. sugar
    1/2 tsp. garlic powder
    1 cup (4 oz.) shredded cheddar cheese

    Recipe

    In a skillet brown the ground beef; drain. Combine with cottage cheese, parsley, garlic powder, salt and pepper. Place about 1/3 cup filling on each tortilla, roll up. Place tortillas, seam side down, in an ungreased 13- x 9- x 2-inch baking dish.

    For sauce, sauté the onion and green pepper in oil until tender. Add tomato sauce, green chilies, chili powder, sugar, and garlic powder. Pour over tortillas. Cover and bake at 350° F. for 30 minutes. Sprinkle with cheese and return to the oven for 5 minutes or until cheese melts. Yield: 4 servings.
