    Egg Bread Dressing

    Recipe Introduction

    This is my sister's recipe for stuffing. I think it's fabulous!

    List of Ingredients

    Egg Bread:
    2 cups cornmeal
    1 tsp. Salt
    3 Tblsp. Melted Crisco or bacon grease
    3 tsp. Baking powder
    1 tsp. Baking soda
    2 cups buttermilk
    3 eggs

    Dressing:
    1 recipe of Egg Bread
    3 cups chopped celery
    1 cup chopped onion
    2 Tblsp. Bacon grease
    8-10 slices bread
    3 cups chicken broth
    3 Tblsp. Chopped parsley
    2 tsp. Each salt and pepper
    2 sticks butter, melted

    Recipe

    For Egg Bread: Sift meal, salt, and baking powder together. Beat eggs, buttermilk, melted shortening, and meal mixture. Stir until smooth. Add soda that has been dissolved in 1 Tblsp. Cold water. Pour into hot greased 10-inch cast iron skillet. Bake 20-25 minutes at 400° F. or until done.

    For dressing: Sauté celery and onion in fat until softened. Mix together all ingredients and let stand for 1 hour. Bake at 350° F. for 1 hour in a buttered 13- x 9-inch pan.
