GOLDEN CREAM OF POTATO SOUP
List of Ingredients
6 cups potatoes, peeled and cubed
2 cups water
1 cup celery, sliced
1 cup carrot, thinly sliced
1/2 cup onion, finely chopped
2 tsp. dried parsley
2 chicken bouillon cubes
1 tsp. salt
1/2 tsp. pepper
3 cups milk, divided
1/4 cup flour
3/4 lb. cheese
4 slices bacon
Recipe
Combine first 9 ingredients in Dutch oven; bring to a boil. Cover, reduce heat and simmer 7-8 minutes or until vegetables are tender.
Fry bacon, set aside. Reserve 3 Tblsp. drippings. Add flour till combined. Gradually add 1/4 cup milk, making a smooth paste; stir into soup. Add remaining milk and cheese; cook over medium heat until soup is thickened. Yield: 8 servings.
