    ORANGE TIARA CAKE

    White cake mix
    1 can mandarin oranges, drained
    2-3 Tblsp. orange marmalade
    1 (8 oz.) pkg. cream cheese, softened
    1 (8 oz.) container Cool whip, thawed
    1-2 Tblsp. powdered sugar
    1 tsp. vanilla extract
    1/2 tsp. orange extract
    orange zest (optional)
    brandy (optional)

    Bake cake in tiara pan and cool completely. (I used about 1/2 of a white cake mix.) Invert the cake and spread marmalade on the bottom and sides of the indentation. (I added some brandy to the marmalade for extra flavor).
    Mix together Cool whip and cream cheese. Mix in a little powdered sugar, vanilla, orange extract, orange zest (and some more brandy, if desired). Spread into tiara cake. Place the mandarin oranges on top of cake in a pretty pattern. Keep leftovers refrigerated. This also freezes well.
