    Red Devil's Food Cake


    List of Ingredients


    • 2 1/2 cup sifted flour
    • 1/2 cup cocoa powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3/4 cup (1 1/2 sticks) butter or vegetable shortening
    • 1 2/3 cup sugar
    • 3 eggs
    • 1 1/2 cups water
    • 1 1/2 teaspoons vanilla


    Instructions


    1. Preheat oven to 350F. Coat two 9-inch layer cakes pans with non stick cooking spray, dust with cocoa powder, tapping out excess; set aside.
    2. Sift flour, cocoa, baking soda, baking powder, and salt onto wax paper and set aside.
    3. Beat butter, sugar, and eggs in large mixing bowl at high sped 3 minutes until fluffy-light.
    4. combine water and canilla, then at low mixer speed add sifted dry ingredients alternately with water mixture, beginning and ending with dry ingredients; scrape bowl often and beat after each addition only enough to combine.
    5. Divide batter between pans, smoothing tops, and bake 30 to 35 minutes, until a toothpick inserted in center of layers comes out clean and ckes are springy to touch.
    6. Cool layers in pans on wire racks 10 minutes, the loosen and turn out on racks. cool to room temperature, then fill and frost.
