    Almond Bits

    Yield: 6 Dozen


    List of Ingredients


    • 2 Cups clout
    • 1 Teaspoon baking powder
    • 3/4 teaspoon cardamom
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1/2 cup vegetable shortening
    • 1/2 cup granulated sugar
    • 1/2 cup packed light brown sugar
    • 1 large egg
    • 1 teaspoon almond extract
    • 60 blanched almonds


    Instructions


    1. Preheat oven to 350 degrees.
    2. Combine the flour, baking powder, spices, and salt.
    3. In a large boel, vream the vegetable shortening and both sugars. Beat in the egg and vanilla extract. Gradually blend in the dry ingredients.
    4. Divide the dough into 4 pieces. Roll each piece into a 15-inch-long rope. Cut each rope into 1 in long pieces.
    5. Press an almond into each cookie, adn place 1 inch apart on ungreased cookie sheet.
    6. Bake for 12 to 14 minutes, until the edges are golden brown. Transfer to wire racks to cool.
