    Backpackers' Bars


    List of Ingredients


    • CRUST:
    • 1/2 cup vegetable shortening
    • 3/4 cup packed light brown sugar
    • 3/4 cup flour
    • 1/2 cup rolled oats
    • 1/4 cup toasted wheat germ
    • 1 toblespoon greated orange zest
    • FILLING:
    • 2 large eggs
    • 1/4 cup acked light brown sugar
    • 1/2 cup shredded coconut
    • 2/3 cup slivered almonds


    Instructions


    1. Preheat the oven to 350 degrees.
    2. To make the crust, cream the vegetable shortening and brown sugar in a large bowl. Blend in the flour, oats, wheat germ, and orange zest. The mixture will be dry.
    3. Press the crust mixture even'y over teh bottom of an ungreased 8-inch square baking pan.
    4. To make the filling, combine the eggs and browns sugar in a medum bowl and beat until well blended. Stir in the coconut.
    5. Spread teh filing over the crust. Sprinkle the almonds over the top
    6. Bake for 30 to 35 minutes, until frim to touch. Cool in the pan on a rack before cutting into bars


    Final Comments


    To enhance the flavor of these bars, add 1/4 teaspoon almond extract to the filling. Raisins may also be added if desired.
