    Cheesecake Bars


    List of Ingredients


    • CRUST:
    • 1 cup flour
    • 1/3 cup packed light brown sugar
    • 1/3 cup vegetable shortening
    • FILLING:
    • 2 large eggs
    • 1 pound cream cheese --at room temperature
    • 1/2 cup granulated sugar
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon almond extract


    Instructions


    1. Preheat the oven to 350 degrees.
    2. To make the crust, combine the flour and brown sugar in a bowl. Cut in the vegetable shortening until the mixture resembles couarse crumbs.
    3. Press the mixture evenly into thye bottom of a 9-inch square baking pan. Bake for 15 minutes.
    4. Meanwhile, making the filling: In a large bowl, beat the eggs until thick and light- colored. Beat in teh cream chease and sugar until smooth. Beat in the lemon juice and almond extract.
    5. Spread the filling evenly over the warm crust. Bake for 20 minutes longer, or until firm to the touch.
    6. Cool in the pan on a rack before cutting into bars.
