Christmas Fruitcake
List of Ingredients
1 cup cooking oil
2 teaspoons salt
1 1/2 cups brown sugar
1 teaspoon soda
4 eggs
2 teaspoons cinnamon
3 cups flour
1 teaspoon cloves
Mix all above together,then add 1 20 oz. can crushed,drained pineapple.
1-1 1/2 cups of dates
1 cup raisins
2 small jars of maraschino cherries,chopped and drained.Save 3 or 4 for decoration.
1 cup coconut
3-4 cups of chopped walnuts,Save 4-5 for decoration.
Recipe
Mix all together and bake at 275 degrees 2 hours in a tube pan or 2 loaf pans,loaf pans take about 1 1/2 hours.
