    Bourbon Street Sweet Potatoes

    List of Ingredients




    4 lb sweet potatoes/yams
    1/2 C butter or margarine
    1/2 C bourbon whiskey
    1/3 C orange juice
    1/4 C packed brown sugar
    1 tsp salt
    1/2 tsp apple pie spice
    1/3 C chopped pecans
    Miniature marshmallows

    Recipe



    Scrub potatoes, and cook, covered in boiling salted water in large saucepan about 35 minutes or until tender. Drain, cool slightly, and peel. Mash potatoes in large bowl. Add all ingredients except pecans and marshmallows and beat until fluffy and smooth. Spoon into a buttered baking dish. Sprinkle nuts around edges and bake at 350° for 45 minutes, add some miniature marshmallows in the center (don't cover nuts) and brown slightly.
