Macaroni Salad

List of Ingredients
- 1 cup fat-free mayonaise
- 1/4 cup cider or white vinegar
- 2 Tbs. mustard, preferably Dijon-style
- 1 lb. macaroni, cooked according to pkg. directions, drain well.
- 3 ribs celery, finely chopped
- 1 med. onion, chopped
- 1/2 cup red pepper .chopped
- 1/2 green pepper , chopped
- 1 cucumber , seeded and diced
- 1 Tbs. parsley
- salt and pepper to taste
- 1 tomato , diced (optional)
Instructions
- Blend mayonaise, vinegar, and mustard together until smooth.
- Combine with the remaining ingredients and toss .
- Refrigerate
