    Mix 'n Match Meals in Minutes for People with Diabetes - e-mail
    Mojo roasted Pork – 2 -- e-w
    Yield: 2 servings

    - 3/4 pound pork tenderloin
    - 1/2 cup mojo sauce (store bought)
    - 1 tablespoon low-sugar apricot spread

    Remove fat from pork and butterfly it by cutting the pork in half lengthwise and opening it like a book. Do not cut all the way through. Place pork in the mojo and let marinate for 15 minutes.

    Heat a nonstick skillet over medium-high heat. Remove pork, reserving marinade. Pat dry with paper towel and saute in skillet 3 minutes. Turn and saute 3 minutes. The pork is done when a meat thermometer reads 160 degrees F.

    Mix reserved marinade and apricot spread together. Remove pork to a plate and add marinade mixture to the skillet. Boil about 1 minutes, scraping up the brown bits in the
    pan as it boils. Divide pork into 2 portions, place on dinner plates, and spoon sauce over the top.
