    Alert! Spinach Tomato Linguine -- e-w

    Serves: 4

    8 ox. uncooked linguine
    3 c. chopped seeded plum tomatoes
    1 10-oz. pkg frozen chopped spinach, thawed and squeezed dry
    1/2 c. chopped green onions
    1 T. olive – or – canola oil
    1/4 tsp. salt
    1/4 tsp. garlic salt
    4 oz crumbled feta cheese

    Cook linguine according to package directions. Meanwhile, in a large nonstick skillet, sauté the tomatoes, spinach and onions until tomatoes are softened. Sprinkle with garlic salt. Reduce heat. Stir frequently, heat until warmed. Drain linguine; toss with tomato mixture Serve immediately.
