    Apricot Chicken Sandwiches
    Serves: 4

    6 oz. chopped poached chicken tenders
    2 T. fruit-only apricot spread
    2 T. chopped fresh apricots (Pits removed)
    4 slices whole wheat bread
    4 lettuce leaves

    Drain cooked chicken and chop well. Mix with apricot spread and chopped fruit. Divide chicken mixture; spreading evenly among bread slices. Top bread with lettuce leaves and slice in half. Slice each half again to make 2 wedges. Serve immediately.

    2 wedges equal: 152 calories…2 gm fat (trace saturated)…17 gm carbohydrate…32 mg cholesterol…l14 gm protein…160 mg sodium…2 gm fiber +++EXC: 2 meat…1 fruit ++++WWP:3
